Mediterranean quinoa super salad
Packed with colour, flavour, and feel-good ingredients, this vibrant salad layers golden halloumi, creamy hummus, and nutrient-rich quinoa for a wholesome meal that’s as nourishing as it is delicious.

ingredients
- 1 cup Ceres Organics Super Grain Quinoa Mix
- 2 Tbsp olive oil
- 200g halloumi, sliced
- 250g hummus
- 4 small cucumbers, roughly chopped
- 1/4 red cabbage, finely sliced
- 1 handful fresh basil
- 120g pickled onion, finely sliced
- 1 tsp paprika oil (or olive oil mixed with a little paprika)
- 1 lemon, cut into wedges
- Sea salt & black pepper, to season
method
- Cook the Super Grain Quinoa Mix according to the packet instructions, then set aside to cool.
- Heat olive oil in a pan and fry the halloumi until golden on both sides.
- Spread hummus across a serving platter and drizzle with paprika oil.
- In a large bowl, gently toss together the Super Grain Quinoa Mix, halloumi, cucumber, cabbage, and most of the basil.
- Spoon the salad over the hummus, then top with pickled onion and the remaining basil.
- Finish with a drizzle of olive oil, a squeeze of fresh lemon, and season with salt and pepper.
