Cool, crisp and refreshing, this Pure Peppermint Mojito is an alcohol-free twist on a summer favourite. Made with brewed organic peppermint tea, fresh lime, a hint of natural sweetness and finished with sparkling water or kombucha, it’s a light and uplifting drink for warm days.

ingredients

  • 1-2 Ceres Organics Pure Peppermint Tea bags
  • ½ cup (100ml) hot water
  • 1 tsp Ceres Organics Coconut Sugar
  • Juice of ½ a lime (or 1 tablespoon pure lime juice)
  • ½ cup sparkling water or lime kombucha
  • Fresh mint leaves to garnish

method

  1. Steep the peppermint tea bag in hot water for at least 15 minutes. Remove the bag and let the tea cool.
  2. Mix in the lime juice and stir in the coconut sugar to taste.
  3. Prepare a tall glass with ice and top with sparkling water.
  4. Stir and garnish with fresh mint leaves and a wedge of lime as desired.
  5. Tip: for a bolder mojito-style flavour, gently muddle a few fresh mint leaves in the bottom of the glass before adding ice.
