red chickpea curry

Cosy up with a bowl of this creamy chickpea and lentil Thai red curry! Serve with Jasmine rice or quinoa and a sprinkle of coriander.

ingredients

  • 2 tsp Ceres Organics Red Thai Curry Paste
  • 1 can Ceres Organics Chickpeas
  • 1 can Ceres Organics Coconut Milk
  • 1 cup vege stock or bouillon
  • 1 can Ceres Organics Brown Lentils
  • Ceres Organics Kelp Salt
  • Squeeze lime juice
  • Handful fresh coriander
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp Ceres Organics Onion Powder
  • 1 tsp Ceres Organics Garlic Powder
  • 2 cups Ceres Organics Jasmine Rice or Quinoa

method

  1. Heat oil in a pan and add the drained and rinsed chickpeas.
  2. Add in the spices, garlic and onion powder along with the curry paste.
  3. Pour in the coconut milk and vege stock. Add the lentils.
  4. Stir through and simmer. Serve on rice or quinoa.
