red chickpea curry
Cosy up with a bowl of this creamy chickpea and lentil Thai red curry! Serve with Jasmine rice or quinoa and a sprinkle of coriander.
ingredients
- 2 tsp Ceres Organics Red Thai Curry Paste
- 1 can Ceres Organics Chickpeas
- 1 can Ceres Organics Coconut Milk
- 1 cup vege stock or bouillon
- 1 can Ceres Organics Brown Lentils
- Ceres Organics Kelp Salt
- Squeeze lime juice
- Handful fresh coriander
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp Ceres Organics Onion Powder
- 1 tsp Ceres Organics Garlic Powder
- 2 cups Ceres Organics Jasmine Rice or Quinoa
method
- Heat oil in a pan and add the drained and rinsed chickpeas.
- Add in the spices, garlic and onion powder along with the curry paste.
- Pour in the coconut milk and vege stock. Add the lentils.
- Stir through and simmer. Serve on rice or quinoa.
